Adrienne's Chicken in a Pot
Note from Debbie: "I found one of my dad's favorite recipes; prepared by my step-mother. Funny how I never knew this was one of his favorites until about 20 years later! I was in a pinch - tired of hearing 'not chicken again'. Then I discovered this rescue!"
Ingredients
2 chicken breasts; split and skinned
3/4 cup water
4 medium sized potatoes; peeled
2 large carrots; sliced 1/4 inch thick
1/2 LB. fresh green beans; ends pinched off
1 large onion; coarsely chopped
1 TBSP dried parsley flakes
1 teasp salt
1/2 teasp ground pepper
1/2 cup dry sherry
Olive oil
Instructions
Place chicken in a large lightly greased casserole dish. Add water and vegetables. Sprinkle with salt, pepper and parsley. Cover with sherry. Cover and bake at 325 for 2 hours.
