Any day is a Holiday Rice

“Did you know wild rice is a marsh grass? Not a rice? And that it tastes more like a nut than anything else? Also, just because this recipe is a Christmas favorite doesn’t mean that we do not enjoy it year round.”

Ingredients

7 cups of water

12 cups wild rice

1 teasp sea salt

½ cup dried cranberries

1 cup finely chopped kale with stems removed (or Italian parsley)

¾  cup coarsely chopped pecans (or walnuts)

5 green onions, minced

2 diced tomatoes

1 cup Raspberry Vinaigrette or ½ cup of Honey Mustard + ¼ cup of honey

Instructions

Boil water in a large pot. Add rice and salt. Reduce heat, cover and cook for approximately one hour or until the rice is completely tender. (There will be excess water. Drain and let rice cool.) In a mixing bowl, add cranberries, kale or parsley, nuts, green onions, tomatoes and Vinaigrette or Honey Mustard. Add cooled rice. Mix well. Chill for 2 hours before serving. enJOY!
