Aunt Betty’s Apple Pudding Cake

“This is a good one.”

“Yeah, that’s what I’ve heard. How do you make it?”

Ingredients
2 cups of sugar
1 cup of shortening

“It says to cream the sugar and shortening together then add beaten eggs.”

“How many eggs?”

2 eggs beaten
2 cups of flour

“Two teaspoons of b.p. Wait a minute. What does b.p. mean? I wonder if that isn’t butter?”

“I have no idea.”

“Let me call my mom. See if she remembers what grandma put in here.”

(Pause)

“Baking Powder!”

2 teaspoons of baking powder
1/2 teasp of nutmeg
1 teasp of cinnamon
4 cups apples peeled and diced

”…and 1 teaspoon of salt. It says salt here after the apples, but I think salt goes in with the baking powder, not the apples. You just cook it for 30-45 minutes on 300-325. If you want it crispier you cook it longer, (like around the edges and stuff. I use a rectangle pan. Grease and flour it first.”
