Baked Tomatoes
“No question about it. Sometimes I feel half-baked. Other times, I ramble several half-baked ideas after another while my husband pretends to list. That’s why I like these Baked Tomatoes. They are impossible to ignore. The melted cheese on top is absolutely an attention grabber!”
Ingredients
4 medium ripe tomatoes with tops thinly sliced off and centers cored (or 6 smaller tomatoes)
1 egg, beaten
1 cup shredded cheddar cheese
3 TBSP cornmeal
1 teasp. Minced garlic
pinch of oregano
pinch of basil
Olive oil (for pan)
Instructions
Preheat oven to 450 degrees. In a small mixing bowl, add cheese, cornmeal, garlic and spices to beaten egg. Spoon mixture into the center of tomatoes; approximately ¾ full. Lightly oil baking pan with olive oil. Place stuffed tomatoes on oiled pan and bake for 15-20 minutes or until tender, golden and juicy. Serve right away! enJOY!
