Blueberry Bran Muffins

Note from Debbie: "I admit it - I am not normally a bran muffin lover. But these are definitely some that when I bake them, I bake a minimum of two dozen. Ken and I both enjoy them too much not to have them on hand for at a least a couple weeks. They freeze beautifully."

Ingredients
2 1/4 cups oat-bran cereal
1 teasp cinnamon
1/4 cup brown sugar
1 TBSP baking powder
1 teasp vanilla
1/2 cup milk (we use organic whole milk but skim milk may be substituted)
3/4 cup apple juice
1 cup fresh blueberries (divided into two parts: 3/4 cup and 1/4 cup)
2 egg whites
2 TBSP vegetable oil

Instructions
NOTE: This recipe makes 12 muffins. If you are like Ken and I, you might want to double it! -- Preheat oven to 425. Whisk dry ingredients together. Blend milk, juice, 3/4 cup of berries and egg whites and oil for 30 seconds in a blender. Mix into dry ingredients then pour into muffin cups. Garnish each muffin with remaining fresh blueberries.
