Chicken Waldorf Salad

The swap of this recipe became a tug of war between two adorable elderly sisters. One insisted there was chicken in it; the other maintained their mother never made it that way. Either way I thought it sounded tasty. This is the chicken version.

Ingredients

2 cups cooked and cubed white chicken meat

1 coarsley chopped red apple, “Not peeled.”

½ cup sliced celery; bite-size

2 TBSP golden or dark raisins, “Doesn’t matter.” Both sisters agreed either raisin will work.

¼ cup chopped walnuts, “Not pecans.”

½ “heaping” cup of Hellman’s Mayonnaise

Instructions

Put all ingredients into mixing bowl. Fold in mayonnaise until coated. Chill for one hour before serving. enJOY!
