Coconut? Pound Cake? Yippie! 

“I love going to baby showers. It seems like baby showers always have the most creative desserts. It is as if we pull out all the stops when a baby is coming – and yeah for us for doing that. When I heard this particular treat was a coconut pound cake; two of my favorite things baked into one, I just had to try it – and get the recipe!”

Ingredients

 

2 sticks unsalted Butter

½ cup Crisco

6 eggs

3 cups flour

½ teasp salt

1-1/2 teasp baking powder

1 cup milk

1 can coconut

1 teasp. Vanilla

1 teasp plus ½ teasp. Coconut extract

2 cups of sugar

Instructions

 

Preheat oven to 350. Lightly grease and flour a tube pan. Cream together butter and Crisco. Add sugar and whip until ultra-creamy; about 3 minutes. Then add eggs, one at a time, and beat for about 30 seconds each. Add extracts. In a separate bowl, whisk together flour, salt and baking powder. Add flour and milk to butter mixture alternately. Fold in coconut. Bake for about an hour and fifteen minutes; or until toothpick comes out clean. Chill. Dust with powder sugar. enJOY!
