Debbie’s Mock BLT
Ingredients (for four sandwiches)
8 slices of a multi-grain or wheat berry bread
12 ounces Philadelphia Brand cream cheese
2 cups alfalfa sprouts
1 cup peeled and thinly sliced cucumbers
1 cup grated carrots
1 cup sliced black olives, drained
1 avocado, thinly sliced
2 small tomatoes, thinly sliced
16 slices red onion “rings”
Instructions
Toast bread. Divide and spread 3 ounces of cream cheese onto one side of each toast slice. Layer with sprouts, cucumbers, carrots, black olives, avocado, tomato and purple onion. Cut into fourths. Serve with blue corn chips and fresh fruit. enJOY!
