Golden Peas
“I thought these were chick peas the first time I tried them at a friend’s house. But she said they were golden peas. When I reproduced this recipe at home, I used organic chick peas instead, and they tasted just as good.”
Ingredients
1 TBSP olive oil
½ cup shredded carrots
½ cup minced celery
½ cup minced onion
1 cup vegetable broth
1 bay leaf
2 cans organic chick peas; drained
Instructions
Sautee carrots, celery and onion in olive oil for 5 minutes or until veggies are tender. Add vegetable broth and bay leaf. Bring to a boil. Add chick peas. Reduce heat. Simmer 10 minutes. Serve warm. enJOY!
