Lamb Burgers

A Note from Debbie: I'll be honest. I used to think my in-laws should be outlawed! But now I'm happy to report we get along great! I love when they come over, and this is why I make delicious lamb burgers! Once they take a bite of these delicious burgers, they are going to want to stay longer!

Ingredients
2 pounds of fresh ground lamb- Thank you Rusty's Grass Finished Foods!
1 TBSP olive oil
2 large cloves of garlic, chopped and sauteed with olive oil
2 large cloves of garlic, chopped and mixed into the meatgoat cheese -for 8 burgers
1/2 cup chopped onions
1 teasp. finely chopped rosemary
1/2 teasp. salt
1/2 teasp. pepper
Goat cheese or mozarella for 8 1/4 pound burgers

Instructions

In a mixing bowl, combine ground lamb, 2 chopped garlic cloves, chopped onions, rosemary, salt and pepper. Smash into 1/4 pound patties. In a large skillet, saute remaining garlic until soft. Reduce heat to 200 degrees. Add patties. Cook approximately 15-25 minutes until desired doneness. Top with goat cheese or fresh slices of mozarella. Serve over a bed of greens with fresh fruit and chilled asparagus. Yum!
