Sicilian Lamb Chops

A Note from Debbie: Do you ever feel overcooked? Like you just don't have enough time in the day! Well, I have a quick and easy recipe for dinner tonight! Sicilian Lambchops!

Sicilian Skillet Lamb Chops

Ingredients

4 1-inch thick lamb chops
3 TBSP olive oil
1 TBSP chopped garlic
pepper to taste
salt to taste
1 TBSP oregano
1TBSP chopped parsley
1 sprig of fresh rosemary (or 1/2 teasp. finely chopped dried rosemary)

Instructions

Season lamb chops with salt and pepper. Set aside. In a skillet, on medium heat, saute garlic and a fresh sprig of rosemary with olive oil for a few minutes. Reduce heat. Add chops. Sprinkle with oregano and parsley. Cook on low for about 20 minutes for "grass-fed" lamb, less time for "grain-fed" lamb. After removing chops from pan, add sliced black olives to garlic and heat for two minutes. Pour over top of chops. Serve over a bed of fresh greens, purple onion slices and vine ripe tomatoes.
