Pecan Pie Brownie Sundae
A Note from Debbie: Who doesn't love brownies and who doesn't love pecan pie? That's why I love this Pecan Pie Brownie Sundae! It's a little bit of both! I would love to know what you think about this recipe and if you have a fun one of your own!
CRUST
3 CUPS YELLOW CAKE MIX
1 EGG
1/4 CUP ( 1/2 STICK) BUTTER OR MARGARINE SOFTENED
1 CUP SHREDDED COCONUT
1/2 CUP FINELY CHOPPED PECANS
FILLING
1 CUP SUGAR
3 EGGS
1/2 TEASPOON SALT
1 CUP CORN SYRUP
1/4 CUP ( 1/2 STICK) BUTTER OR MARGARINE MELTED
1 TEASPOON VANILLA
2 CUPS CHOPPED PECANS
Preheat oven to 350 degrees . In a large bowl, combine cake mix, egg, butter, coconut and pecans. Beat on low speed until well blended. ( mixture will be crumbly )
Press mixture into bottom of greased and floured 9"x 13" baking pan. Bake for about 13 minutes ( edges should be barely browned, but not too dark), and remove from oven.
While crust is baking, prepare filling. In medium bowl, sugar , eggs, salt, corn syrup, butter and vanilla. Beat on medium high speed until well blended and fluffy. Stir in pecans.
Pour filling over hot crust and return to oven. Bake for 25 to 30 minutes--- until edges are brown and center is set. Cool and cut into bars.
Top with a scoop of your favorite ice-cream! Add carmel or chocolate syrup.
