Super Hero Fruit Slaw
Is it a slaw? Fruit? Or Salad?

A Note from Debbie: My kids won't touch cabbage. I have no idea why. You'd think this crunchy bloom was full of thorns or something. One day I decided to toss shredded cabbage into their favorite fruit salad. Of course, they froze with their plates attached to their chest. "What's this? It's not coconut is it?" A reprieve. I could honestly say that it wasn't. "Is it lettuce?" No, not lettuce either. They scooped it onto their plate and enjoyed every bite of "mom's new fruit salad".

INGREDIENTS

1/2 small green cabbage; shredded
2 small vanilla Yoplait yogurts, (Yoplait is highly recommended because of it's texture)
1/4 cup orange juice, scant
1 can mandarin oranges, drained and patted dry
2 kiwi sliced in 1/4 inch "half-moon" pieces
1 quart of strawberries, cut into fourths
1 pint of blueberries
1 cup of tiny-chopped cantalope
1 red delicious apple in bite-size chunks
1/4 cup almond slivers

INSTRUCTIONS

Be sure fruit is clean and dry. If it isn't dry, the slaw will be "watery". In a medium sized bowl, whisk orange juice into yogurt. Add shredded cabbage. Toss to coat. Reserve a few berries and mandarin oranges for garnish. Fold in chopped fruit. Garnish with almond slivers, strawberries, blueberries, and mandarin oranges. Serve chilled. NOTE: For a lesscreamy slaw, use 1 yogurt instead of 2 and reduce orange juice to 2 tablespoons.
