Get in Line Sweet Potato Casserole

Debbie's Note... "It is recommended (if you want seconds) to be near the front of the line as soon as the buffet has opened up. That's what my husband said one year as our guests gathered at the Thanksgiving table. But he himself went last; gotta love him -- a gentleman."

Ingredients

3 cups of cooked, mashed sweet potatoes - peeled
1 cup white sugar
2 eggs slightly beaten
1/2 cup evaporated milk
2 teaspoons vanilla
pinch of salt

Topping Ingredients

1/2 stick unsalted butter, softened
1 cup light brown sugar, packed
1/2 teaspoon cinnamon
1/2 cup flour
1 cup finely chopped pecans

Instructions

Combine sweet potatoes, sugar, eggs, milk, vanilla and salt. Place in a very lightly greased rectangle casserole dish. To prepare the topping, cut brown sugar, flour and cinnamon into softened butter to pea size or smaller. Use a fork to stir in chopped pecans. Cover top of casserole with topping. Bake in prepeated 350 degree oven for approximately 30 minutes.
