Father and Son Wings
Ingredients
Large cast iron skillet for deep frying
4 cups (ore slightly more) Canola oil (to cover wings completely)
3 paper towels for blotting
Large mixing bowl for tossing
"Big spoon" (for amateur tossers like me)
3/4 cup Cayenne Pepper Sauce
2 TBSP's melted butter
1/2 teaspoon salt
1-1/2 pounds chicken wings; raw, disjointed and cut into "wings" and "drummettes"
Instructions
...According to my 13-year old son, "these are really easy." He's been making these wings with his dad "since he was three". Hmmm... Three? In any case, Kyle tells me that you "just take the pepper sauce and pour it into the big bowl. Then melt butter in the microwave and add it to the pepper sauce." (Sure enough—it does sound simple.) "Next, stir in a couple shakes of salt. Then it's dad's turn. Dad heats the oil" to 350 degrees. "Dad fries the wings until they float and get crispy." 170 degrees. "Then dad takes the wings from the hot oil and puts them onto the paper towels. That's when I blot them and do the fun part... toss them into the sauce. I don't use a spoon." --- I must admit, this simple recipe shared by father and son is a special favorite at the Davis house. We munch in front of a football game with celery and "Blue Ranch" dressing. A compromise. Kyle likes ranch. We like bleu cheese. So we crumble bleu cheese into our side of the ranch dressing! Enjoy!!
